Indian Cuisine - The Tandoori Story

If you’re familiar with Indian cuisine, you’ve probably heard the word “tandoori” before. Tandoori has been a staple in Indian cuisine for centuries. In order to make tandoori dishes, a selection of meat (the most popular being chicken) is cooked in a cylinder-shaped clay oven at very high temperatures. This traditional oven is called a tandoor, and its even distribution of high heat creates a unique flavor profile that gives the distinct charred flavor that makes tandoori such a well-known and beloved component of Indian cuisine.

A typical tandoor oven is curved at the top and made with a material such as clay for insulation. By using insulating materials, the oven remains at a consistently high temperature for long periods of time. Tandoors are also used for baking naan bread, giving it the trademark charred appearance and flavor.

At India Bistro in the Roosevelt neighborhood of Seattle, Washington, we have a large selection of traditional tandoori-cooked meals on our menu. Each of our dishes is prepared using only the freshest local ingredients for unbeatable flavor and quality.

Here are a few of the top tandoori-cooked items from our menu at India Bistro:

Lamb Boti Kebab: Kebabs are a popular dish made by cooking a selection of meat on a long skewer, typically in a tandoor. We make our Lamb Boti Kebab at India Bistro using pieces of boneless lamb legs marinated in a blend of house spices, placed on a skewer, and grilled in our tandoor in-house.

Tandoori Chicken: When it comes to tandoori cuisine, one of the most popular dishes is tandoori chicken. Our Tandoori Chicken on our menu features half of a spring chicken marinated with Indian spices and grilled to perfection in the tandoor.

Fish Tikka: The tandoor is also a delicious means of cooking fresh fish, as exemplified by our Fish Tikka! This dish is made with your choice of fish (salmon or cod), marinated with a hint of garlic and ginger, slowly cooked in the tandoor.

Tandoori Combo: Can’t decide which tandoori dish sounds good? Try a few options with our Tandoori Combo! This house specialty comes with a combination of tandoori chicken, lamb, chicken tikka, seekh kebab, fish, and prawns cooked in the tandoor.

In addition to these tandoori dishes, we also offer fresh soups and salads, vegetarian specialties, signature dishes, and a large selection of fluffy Indian breads made from scratch. For authentic Indian cuisine right in the heart of Seattle, come dine with us at India Bistro Roosevelt!
